Mixed Berry Crisp

This recipe for mixed berry crisp is the perfect sweet treat for summer! Mixed berries topped with a buttery, crunchy crumble and vanilla ice cream!

Ingredients
  

For Filling
  • 5 cups fresh or frozen mixed berries I used frozen (no need for thawing)
  • 1/4 cup granulated sugar
  • 1 tbsp corn starch
  • 1/2 tsp cinnamon
For Topping
  • 1 cup all purpose flour
  • 3/4 cups old fashioned oats
  • 1/2 cup brown sugar, light or dark
  • 1/4 tsp salt
  • 1/2 cup unsalted butter diced, cold
  • vanilla ice cream for serving

Method
 

  1. Preheat oven to 375°. Grease an 8 inch, or 7 x 11 inch baking dish.
  2. Place the mixed berries in greased baking dish; sprinkle sugar, corn starch and cinnamon on top of berries, mix together and set dish aside.
  3. In a medium bowl, mix together the oats, flour, brown sugar and salt. Cut in the pieces of butter with a fork or by hand. Until mixture resembles coarse crumbs.
  4. Bake in preheated oven for 35-40 minutes, until topping is light brown and filling is bubbly.
  5. Serve warm with a scoop of vanilla ice cream, if desired.
  6. Enjoy!
