Mixed Berry Crisp
This recipe for mixed berry crisp is the perfect sweet treat for summer! Mixed berries topped with a buttery, crunchy crumble and vanilla ice cream!

For Filling
- 5 cups fresh or frozen mixed berries I used frozen (no need for thawing)
- 1/4 cup granulated sugar
- 1 tbsp corn starch
- 1/2 tsp cinnamon
For Topping
- 1 cup all purpose flour
- 3/4 cups old fashioned oats
- 1/2 cup brown sugar, light or dark
- 1/4 tsp salt
- 1/2 cup unsalted butter diced, cold
- vanilla ice cream for serving
Preheat oven to 375°. Grease an 8 inch, or 7 x 11 inch baking dish.
Place the mixed berries in greased baking dish; sprinkle sugar, corn starch and cinnamon on top of berries, mix together and set dish aside.
In a medium bowl, mix together the oats, flour, brown sugar and salt. Cut in the pieces of butter with a fork or by hand. Until mixture resembles coarse crumbs.
Bake in preheated oven for 35-40 minutes, until topping is light brown and filling is bubbly.
Serve warm with a scoop of vanilla ice cream, if desired.
