No-Bake Cake Batter Truffles

These no-bake cake batter truffles are easy to make, and the perfect “pop in your mouth” treat. They are dense, sweet, and filled with colorful sprinkles!

Cake is always a great option for special occasions. But why not change things up and make these no-bake cake batter truffles?!

Whether its a birthday, anniversary, holiday, or something else worth celebrating, these are perfect! The fun thing about these truffles are the sprinkles. And you can switch up the colors of the sprinkles to match your occasion!

Okay, so I’m sure you’re thinking to yourself “raw cake batter”? There is flour in this recipe. And even though a lot of us have been eating raw dough for years, it’s recommended to heat-treat the raw flour before adding it to this recipe, and I will get into that!

But, I will say, I did not do this to my flour. I have been eating raw cookie dough ever since I was a little girl. But like I said, do this at your own risk, and do whatever makes you feel comfortable about eating these delicious truffles!

What exactly is heat-treating raw flour?

Flour is a household staple for baking and cooking. It’s used in many many recipes. Some people already know this, but a lot dont – flour is a raw food, so therefore, it could be exposed to harmful bacterias like salmonella, or E. coli.

When you heat-treat flour, it kills any bacteria that may be lurking around in the flour. Kind of like any meat, poultry or fish. You basically bake your flour in the oven until it reaches a certain temperature.

There are so many recipes out there for cake batter truffles, pops and balls. Most of them are completely coated with chocolate, and they look so beautiful, smooth and perfect! Well, not these truffles.

I want my recipes to be as easy as possible.

I’m sorry, but dipping each dough ball into melted chocolate and rolling them onto a baking sheet is just too much work. Why not pour the melted chocolate on top of each ball?! So, they may not be as pretty and perfect, but they still taste damn good!

Not to mention, I feel like when they are completely dipped in chocolate, its just too much. Too sweet!

No-Bake Cake Batter Truffles

These no-bake cake batter truffles are easy to make, and the perfect "pop in your mouth" treat. They are dense, sweet, and filled with colorful sprinkles!

Ingredients
  

For Dough

  • 8 tbsps unsalted butter, softened
  • cups funfetti cake mix
  • 1/4 cup granulated sugar
  • 1/2 cup all purpose flour *see note below
  • 1/2 tbsp vanilla extract
  • 1/2 cup rainbow sprinkles, or sprinkles of choice

For White Chocolate Coating

  • cups white chocolate waffers, or white chocolate chips
  • 2 tbsps rainbow sprinkles, or sprinkles of choice

Instructions
 

  • In a large bowl of a stand mixer, or hand held mixer, mix together the butter, cake mix, sugar, flour and vanilla.
  • Add sprinkles and mix until sprinkles are combined well.
  • Using a tablespoon or tablespoon sized ice cream scoop, scoop dough and roll into balls.
  • Place on a lined baking sheet. Continue until dough is gone.
  • Place baking sheet with dough balls in freezer for 10 minutes.
  • When 10 minutes is up, keep dough balls in freezer while you melt the white chocolate.
  • Take dough balls out of freezer, and place dough balls on a wire rack. Put baking sheet under neath wire rack.
  • Take melted chocolate and drizzle over each dough ball.
  • Immediately sprinkle sprinkles on top of white chocolate.
  • Let cool and set in fridge for 30 minutes before enjoying.
  • Store truffles in fridge for up to 7-10 days!

  • *Please see note below for heat-treating your raw flour before adding to recipe if you are not comfortable with eating raw flour.

Notes

*There is raw flour in this recipe. If you want to make sure any bacteria is killed, you will want to heat-treat the flour…
Preheat oven to 350 degrees. Line a baking sheet with parchment paper, and add flour in an even layer to baking sheet.
Bake for 5-7 minutes, or until the flour reaches 160 degrees. Make sure to not burn the flour. You’re just killing off any bacteria.
