No-Bake Protein Balls

These no-bake protein balls are gluten free, low carb, and sweetened with natural sweeteners! The perfect morning or mid day pick me up, or a guilt-free sweet treat to satisfy those late night cravings!

I see so many recipes for no-bake protein balls online, but never know which ones to try, or if they will actually taste good, and actually keep me full.

These guys are packed with protein, and delicious sweetness. The fun part is you can add whatever mix-ins you want!

Obviously, in order to keep these guys on the healthy side, you want to add in healthy mix-ins.

I am obsessed with Bob’s Red Mill brand for anything. They have everything under the sun when it comes to baking and cooking ingredients. The best part is that all of their stuff is 100% all natural.

Let me show you how easy these protein balls are to make…

First, you want to mix together all of your dry ingredients.

You’re sorta making your own flour mixture, if you will. Mixing together your almond flour and coconut flour. Along with your coconut sugar and cinnamon.

Also, I need to go off topic for a second…coconut sugar. It is my new go to for sweetener. It has this really nice, hearty sweetness, kind of like molasses.

After you mixed all of your dry ingredients together, you want to add in your wet ingredients, and mix-ins of choice. I added flax seeds and dark chocolate chips for my mix-ins.

When its time to add in your milk, you want add 2 tablespoons at a time to make sure your dough doesn’t get too watery. You want a nice thick dough that doesn’t stick to your spatula or spoon.

Roll your dough into balls. I took about a tablespoon size piece of dough for each ball. This made about 12 protein balls.

You then want to chill them in the fridge for about 30 minutes.

They will be nice and soft, but not too soft. Enjoy!!

Make sure to store any left overs in a tightly sealed container in fridge.

No-Bake Protein Balls

Servings 12 Protein Balls

Ingredients
  

  • 6 TBSP Coconut Flour
  • 2 TBSP Almond Flour
  • 4 TBSP Coconut Sugar, or natural sweetener of choice
  • 1/4 TSP Cinnamon
  • 4 TBSP all natural peanut butter, smooth
  • 2 TBSP Pure Maple Syrup
  • 2-4 TBSP Mix-Ins of choice I used flax seeds and dark chocolate chips
  • 6-7 TBSP Almond Milk, or dairy free milk of choice

Instructions
 

  • In a large bowl, mix together your coconut flour, almond flour, sugar of choice and cinnamon.
  • Add peanut butter, maple syrup and mix ins. Mix together until dough turns clumpy.
  • Add your milk in, 2 tablespoons at a time, just to make sure you don't make dough too watery. You want a nice thick dough that doesn't stick to spatula.
  • Take about a tablespoon size piece of dough, and roll into ball. Place on wax paper on plate and let balls chill in fridge for about 30 minutes.
  • Enjoy!

Notes

You can make these protein balls vegan by making sure your mix-ins are also dairy free!!
