One pan meals are the best thing ever. They are so easy, and you don’t have a bunch of dishes to clean up after. Its great!
When making a one pan meal, you want to keep in mind of temperature and time. Some vegetables and meats require different temperatures and times. There are ways to work around this though, like instead of cooking entire breasts of chicken, cut them up into bite size pieces so they take less time to cook.
Thats what I did for this recipe. Asparagus doesn’t take that long to cook, neither do potatoes when they are cut up into bite size cubes. Everything worked out perfectly.
Marinating chicken is the best thing you can do for it. Even if you marinate it for 30 minutes, just to get the flavor and seasonings into the chicken. It also leads to juicier chicken.
Don’t skimp on your salt and pepper also. Salt and pepper help bring out the natural flavors that chicken has to offer.
Ive tried alot of sweet chili sauces, but the one by Trader Joes is by far my favorite.
If you have the time to prepare this the night before you cook it, that would be great. The longer you marinate, the better!
You want to make sure to mix your asparagus and potatoes in two separate bowls. You will be grouping them separately on the baking sheet.
The satisfaction of everything separated and grouped together so neatly is great!
Notice the lemon slices on the asparagus…that was my first time mixing lemon with asparagus, and it won’t be my last time. It was a delicious and refreshing flavor combination.
