Patriotic Sugar Cookie Bars

These patriotic sugar cookie bars are the perfect dessert for Summer time BBQ’s! Buttery sugar cookie bars with vanilla marshmallow frosting, sprinkled with red, white and blue M&M’s on top!

Before I get to talking about these delicious, and amazing patriotic sugar cookie bars, I have to apologize. I made these bars for a party I attended last night, and they were gone before I remembered to take a final photo of them cut up, and served…that is how good they were!

This is one of my favorite times of the year. The end of May. Memorial Day weekend comes (God Bless our fallen heros) and everyone gets into full swing Summer mode.

Everyone is firing up their grills, opening their swimming pools, having BBQ’s and Summer gatherings. Whats not to love about that? A good old American Summer.

I am loving all of the patriotic colored items they have baking! I found these awesome red white and blue M&M’s recently, and knew I had to think of a delicious dessert to add them to.

A big block of sugar cookie, with vanilla marshmallow frosting topped with red white and blue M&M’s, cut into personal sized bars. Perfect!

This recipe was so easy to make. Way easier than a traditional sugar cookie, in my opinion. Most sugar cookies are cut into shapes. That takes some time. This recipe, you just press the dough right into a baking dish, bake it, and top it!

The frosting I used, like I said is vanilla marshmallow frosting. I could have used plain old vanilla frosting. But I wanted to use the vanilla marshmallow frosting. It had a hint of roasted marshmallow. It was amazing!

I kept these chilled until they were ready to be served. If you are serving these on a warm day, you will want to keep them chilled too. The frosting may melt and get sloppy.

I honestly thought that keeping them cold would affect the texture of the bars, seeing sugar cookies are chewy, soft and buttery. I thought the coldness would make them hard and stale tasting. They actually had a great texture! Almost like a shortbread texture.

If you make these bars for any upcoming summer gatherings, it’ll be a hit. Guaranteed!
