Pecan Banana Muffins

If you have a few over ripened bananas sitting on your counter, make these pecan banana muffins! They are soft, moist, sweet, nutty and just perfect!

Bananas are awesome to bake with. They create a nice, moist and dense texture in almost anything you use them to bake with. Not to mention they are naturally sweet, so you don’t need to add a ton of sugar to the recipe!

My favorite part of any muffin is the top. It’s always the moistest part of the muffin! Also, I need to apologize to anyone who is sensitive to the word “moist”. Unfortunately it is a very commonly used name when it comes to being or cooking!…

If you don’t like pecans, or nuts in general, you can leave them out or use walnuts!

Pecan Banana Muffins

These pecan banana muffins are super moist and soft. Loaded with bits and pieces of pecans to give them a perfect nutty flavor! Perfect for breakfast, a snack or dessert!

Ingredients
  

  • 3 bananas, very ripe
  • 1/4 cup unsalted butter, melted
  • 1/4 cup whole milk OR half and half
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup pecans, chopped + more for topping

Instructions
 

  • Preheat oven to 350°. Line a muffin tin with liners or non stick spray.
  • In a large bowl, mash bananas until they are smooth with no big lumps. Add melted butter and milk. Mix until well combined.
  • Add in egg, vanilla, brown sugar and granulated white sugar. Mix until well combined.
  • Add flour, salt, baking soda and pecans. Mix until everything is well combined.
  • Using an ice cream scoop, cookie scoop or spoon, spoon batter into lined muffin tin, making sure that each muffin cup has the same amount of batter
  • Add more pecan on top (optional).
  • Bake in preheated oven for 18-20 minutes, or until a toothpick inserted in middle of muffin comes out dry and clean.
