Pistachio Wedding Cookies

These pistachio wedding cookies literally melt in your mouth! They are so easy to make, using pistachio pudding mix. Coated with just the right amount of powdered sugar for that extra sweetness!

Pistachio wedding cookies are super soft! They literally melt in your mouth, thanks to all the butter! These are anything but low calorie, nor low fat, but thats ok! We all need that delicious, buttery treat once in a great while!

Why are they called “wedding” cookies?

I was curious as to why these cookies were called wedding cookies, because I’ve never been to a wedding where they serve these. So I turned to good old google.

Have you ever heard of the traditional Mexican wedding cookies? They are balls of dough that consist of butter, flour, vanilla, pecans and powdered sugar, then baked for a few minutes. I actually have a recipe similar to that, except mine are called “snowball cookies”. You can find the recipe here https://thehungrylyoness.com/snow-ball-cookies/.

But I guess thats how these cookies got their name. Any cookie that consists of only butter, flour, vanilla, some kind of nut and powdered sugar can be called a “wedding” cookie. Pretty interesting!

I think any cookie with the amount of butter these guys have should be coated with powdered sugar. It helps soak up the grease from the butter! Maybe thats why they coat them in the sugar after all…

Once you bite into these cookies, you’ll be blown away by the soft texture. Its pretty addicting, so beware!

Pistachio Wedding Cookies

Pistachio Wedding Cookies

These pistachio wedding cookies literally melt in your mouth! They are so easy to make, using pistachio pudding mix. Coated with just the right amount of powdered sugar for that extra sweetness!

Servings 20 cookies

Ingredients
  

  • 2 sticks salted butter, soft
  • 1 ¼ cup powdered sugar, divided
  • 2 tsps vanilla extract
  • 1 ¾ cups all purpose flour
  • 1 3.4 oz package pistachio instant pudding mix

Instructions
 

  • In a large bowl with a stand or hand held mixer, cream the butter until nice and smooth.
  • Add in 1/2 cup of the powdered sugar and beat until fluffy. Add in vanilla and mix until combined.
  • Add pudding mix and mix until smooth.
  • Add flour and mix until smooth and well incorporated.
  • Transfer dough to plastic wrap or wax paper, and form into a ball. Cover and place in fridg for 1 hour.
  • Preheat oven to 350°. Remove dough from fridge and use teaspoon size spoon or scoop to scoop out dough, roll into balls and place on lined large baking sheet.
  • Take the back of spoon or scoop and slightly press down on ball to make an imprint/dent.
    Pistachio Wedding Cookies
  • Bake in preheated oven for 8-10 minutes. (The cookies will still be really soft. They are supposed to be.)
  • Remove from oven when done and let cool for 5 minutes.
  • Using remainder of the powdered sugar, roll cookies in sugar and place on wire rack to cool complterely.
  • Store in an air tight container. Enjoy!
