Method
- In a large bowl with a stand or hand held mixer, cream the butter until nice and smooth.
- Add in 1/2 cup of the powdered sugar and beat until fluffy. Add in vanilla and mix until combined.
- Add pudding mix and mix until smooth.
- Add flour and mix until smooth and well incorporated.
- Transfer dough to plastic wrap or wax paper, and form into a ball. Cover and place in fridg for 1 hour.
- Preheat oven to 350°. Remove dough from fridge and use teaspoon size spoon or scoop to scoop out dough, roll into balls and place on lined large baking sheet.
- Take the back of spoon or scoop and slightly press down on ball to make an imprint/dent.

- Bake in preheated oven for 8-10 minutes. (The cookies will still be really soft. They are supposed to be.)
- Remove from oven when done and let cool for 5 minutes.
- Using remainder of the powdered sugar, roll cookies in sugar and place on wire rack to cool complterely.
- Store in an air tight container. Enjoy!
