Balsamic Baked Chicken Thighs With Goat Cheese + Thyme

These balsamic baked chicken thighs with goat cheese and thyme are so flavorful on the outside and tender on the inside.

I used boneless and skinless chicken thighs for this recipe. If you prefer skin on and bone-in chicken thighs, you can use those. I just wanted to take away the fat and calorie content as much as I could.

The flavor combinations of the balsamic, thyme and goat cheese are unreal!

I love adding chopped up onion to chicken recipes. I think they add so much flavor. I say if you have the opportunity to add an onion, go for it!

The balsamic mixture I put together is the best bath for these thighs. It added so so soooo much flavor to them.

You want to make sure to spread out your onions on top, and in between the chicken. Just to make sure the flavor gets everywhere.

When adding your balsamic mixture, pour it on top of each chicken thigh and let them soak all around. Add your goat cheese crumbles on top, followed by thyme.

How beautiful does that look? The taste is even better! The onions are nice and tender, and the goat cheese is warm and has a roasted taste to it. So so good!

Balsamic Baked Chicken Thighs With Goat Cheese + Thyme

Servings 6 Chicken Thighs

Ingredients
  

  • 1 1/2-2 lbs. Skinless & Boneless Chicken Thighs Fat trimmed
  • 1 Cup Chicken Stock
  • 1 Medium Sweet Onion, chopped
  • 1/4 Cup Balsamic Vinaigrette
  • 1 1/2 TBSP olive oil
  • Dash Thyme, chopped (optional)
  • 1/4 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • Black Pepper, Salt, to taste
  • 1/2 Cup Goat Cheese Crumbles

Instructions
 

  • Preheat oven to 425 degrees. While oven is preheating, prepare your balsamic mixture.
  • In a medium bowl, mix together chicken stock, balsamic vinaigrette, olive oil, garlic powder, onion powder, salt, pepper.
  • Place chicken thighs in baking dish/casserole dish. Add onions in between chicken.
  • Pour balsamic mixture on top of chicken thighs. Sprinkles goat cheese crumbles on top of chicken thighs evenly, followed by thyme.
  • Bake for 25-30 minutes.
  • Enjoy!
