Balsamic Baked Chicken Thighs With Goat Cheese + Thyme

Servings: 6 Chicken Thighs

Ingredients
  

  • 1 1/2-2 lbs. Skinless & Boneless Chicken Thighs Fat trimmed
  • 1 Cup Chicken Stock
  • 1 Medium Sweet Onion, chopped
  • 1/4 Cup Balsamic Vinaigrette
  • 1 1/2 TBSP olive oil
  • Dash Thyme, chopped (optional)
  • 1/4 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • Black Pepper, Salt, to taste
  • 1/2 Cup Goat Cheese Crumbles

Method
 

  1. Preheat oven to 425 degrees. While oven is preheating, prepare your balsamic mixture.
  2. In a medium bowl, mix together chicken stock, balsamic vinaigrette, olive oil, garlic powder, onion powder, salt, pepper.
  3. Place chicken thighs in baking dish/casserole dish. Add onions in between chicken.
  4. Pour balsamic mixture on top of chicken thighs. Sprinkles goat cheese crumbles on top of chicken thighs evenly, followed by thyme.
  5. Bake for 25-30 minutes.
  6. Enjoy!
