Nutella meets banana bread. That is exactly what this muffin tastes like. It is amazing! And, I mean, it has to be somewhat healthy because of the banana…and the hazelnuts…right? Well, id like to at least think so!
Not sure about you, but I am a sucker for Nutella. I wish we could have it in our house more often, but we can’t. I will literally eat it by the spoon, and my hips do not need that. It’s great to bake with once in a while as a treat. Although, there is some left over now that I think of it…must. be. strong.
Even though there are a few other ingredients in this recipe, the star of the show is absolutely the Nutella. That’s what makes this recipe so amazing. Otherwise, it’s just banana bread in muffin form. Booooring.
You want to make sure to use ripened bananas. Ripened bananas mash easier and they have a stronger banana taste when they are ripened.
Once you have all of your ingredients ready, and banana mashed, you want to add your dry ingredients to a large stand mixer or large bowl and mix together until well combined.
You now want to add in your egg, butter, and banana. Mix until well combined. Your dough will be pretty thick and sticky.
Now you want to fill your muffin tin with the dough. This part gets a little messy, just because the dough is so thick and sticky, and hard to control. But it doesn’t matter if the muffins don’t look perfect. They will still taste amazing! It’s all about the taste.
You can either line your muffin tin with muffin cups or spray them with non-stick spray. I just sprayed mine with non-stick spray.
And, as you can see I wasn’t neat at all when filling my cups up.
Once every cup is filled up, its time to top them with the good stuff! Use about a teaspoon full of Nutella and plop it on top of the muffin. Take a toothpick and swirl it into the dough. If your Nutella is on the thicker side like mine was, zap it in the microwave for about 15 -20 seconds to loosen it up a bit so it’s easier to swirl into the dough.
Ok, now that we are all swirled in and ready to go, its time to pop them in the oven for 17 minutes. Check with a toothpick before taking them out. Insert a toothpick in the middle of a muffin and if it comes out clean, they are done!
Yum yum YUM! My god, these things are gorgeous! And they are so imperfect…I love it! I have to be completely honest with you. They taste WAY better when they are still warm. But they still taste amazing after they are cooled off. Just pop them in the microwave for a few seconds before eating them to give them a little flavor boost!
