Method
- Preheat oven to 400 degrees.
- Wash beets. Cut off stems and ends. Peel skin off.
- Place beets in tin foil.
- Drizzle olive oil on top of each beet.
- Make sure to seal up your tin foil so no air can get in or out.
- Bake for 45-60 minutes.
- Beets are done when a knife goes through middle of beet easily.
- While hot, carefully cut beet into four pieces. Sprinkle with goat cheese and drizzle with balsamic glaze.
