Its almost Fall ya’ll! One of my favorite vegetables to cook with in the fall is butternut squash, or any squash really. This roasted butternut squash with herbs and garlic is a perfect fall side dish! Tossed with olive oil, brown sugar, herbs and garlic, then roasted to perfection!
An abundance of herbs make the flavors happen for this recipe. Especially the fresh sage. I have so much of it right now in the garden. You can use dried sage if you want, but I prefer using fresh when I can!
What else pairs well with butternut squash? Cinnamon and brown sugar for that perfect mild sweetness.
My cinnamon is pretty much pushed in the back of my spice cabinet, and neglected in the spring and summer months, but when fall and winter come along, its pretty much one of my mostly used spices.
Is there even such thing as too much garlic? I think not. The chunks of garlic that get roasted along with the squash has the most amazing roasted garlic flavor!
