Method
- Preheat oven to 325°.
- Place sliced tomatoes on a non stick baking tray. Drizzle with olive oil, salt and pepper. Bake in preheated oven for 45-50 min.
- When tomatoes are done roasting, heat a skillet or saute pan over medium heat.
- Brush outsides of each slice of bread with olive oil. Place a few slices of mozzarella on one slice of bread, followed by tomatoes, basil and more mozzarella and tomatoes.
- Cook until cheese is melty and bread turns golden brown. About 5 minutes per side.
- Drizzle with balsamic glaze. Serve immediately.
