Method
- Add 2 cups of water to crockpot.
- Add salt, bay leaf, a few sprinkles of onion powder, garlic powder, a pinch of black pepper, mix around.
- Wash and dice potatoes. I didn't peel my potatoes. I only cut off any eyes that were on my potatoes and rooted down into the flesh of potato. You can keep the skin on or peel it off.
- Add potatoes to crockpot.
- Peel and dice your carrots up. Add them to crockpot.
- Chop up leeks, onion, and celery. Add to crockpot.
- Drizzle some olive oil on top of vegetables, and toss veggies around.
- Lastly, dice up your chicken sausage and add on top of vegetables. Leave the sausage on top, don't mix around.
- Cover and cook on high for 4-6 hours or low for 8-10 hours.
