Slow cooker chicken tacos in lettuce wraps will be one of my new go to crockpot recipes, thanks to my sister in law. She had my husband and I over for dinner the other night, and I was introduced to some of the best, slow cooked chicken I’ve ever had!
I asked her what was in it, and she said she would tell me after I had my first bite. The aromas coming from the chicken were incredible! I had my first bite, and my taste buds were freaking out (in a good way)! So much flavor, and the chicken…OMG…it was so tender and melted in my mouth.
My sister in law then told me the ingredients that were in it, and the process. I thought to myself “that’s it?!”. It’s such a simple recipe, with very little ingredients. But the flavor is so amazing, you would think there were way more than 4 ingredients involved in creating the incredible flavors.
The first step is to place your chicken in your crockpot.
I would make sure to cut any fat chunks off of your chicken before placing your chicken into your crockpot.
Then you want to place all of your ingredients on top of the chicken, starting with your taco seasoning packet. Followed by the salsa and lime juice.
After adding all of your ingredients to your crockpot, cover and cook on low for 6-7 hours or on high for 4 hours.
Once your chicken is done, pick up chicken breasts and place in a medium size bowl to shred. Add some of the sauce it cooked in, add to romaine lettuce leafs, finish with your toppings of choice and enjoy!!
I added some red onion and a sriracha aioli (which is just mayo and sriracha mixed together!). Garnished with some chopped up fresh parsley. You can use cilantro instead. I used parsley because thats all I had on hand.
