Method
- Fill a large pot with water. Add potatoes with skin in water. Bring to a boil, and boil until each potato is tender and cooked throughout. About 15-20 minutes. Each potato will take more or less time to cook, depending on size. I take tongs and a knife after 15 minutes and check the smaller ones first. If the knife slides through the middle easily, they are done.
- In the meantime, peel and dice your hard boiled eggs. Make sure to chop them up well, but not too small. Set aside.
- As your potatoes are done cooking, use tongs to move to a strainer to let them cool off.
- Once they are cooled off enough to handle, peel skins off of each potato. The skin should come off fairly easy.
- Cut your potatoes into medium size cubes and add to a large mixing bowl.
- In the same bowl as potatoes, add your mayo, Italian dressing, chopped up eggs and salt.
- Mix everything very well together.
- Let chill before serving.
