Vegetarian Pulled Pork and Broccoli Over Quinoa

Vegetarian pulled pork and broccoli over quinoa using jackfruit is a great alternative for all you vegetarians. Jackfruit has the same look and texture as pulled pork. Its incredible!

Jackfruit. It can be intimidating, yet surprisingly delicious and easy to cook with. It has so many health benefits as well. So don’t let it scare you too much!

You can buy jackfruit as a whole entire fruit, or, you can go the easy way and get it canned.

I get mine at Trader Joes. I am sure you can find it at most super markets.

Now, I am warning you, if you have never cooked with jackfruit before, or have seen what it looks like, it can be little scary, and concerning. But, don’t let it scare you. You got this!

It is interesting looking to say the least.

What you will need for this recipe a can of jackfruit, quinoa, garlic powder, onion powder, bbq sauce, broccoli, sweet onion, and water.

You want to open your can of jackfruit, drain and rinse it.

Then, you want to pull the jackfruit pieces apart with your fingers, so it resembles the look of pulled pork.

Again, I am sure you are thinking to yourself “what in the world is that??”. I thought the same exact thing when I first tried cooking with it. But it will surprise you.

Next, you want to chop your broccoli and onion.

Over medium high heat, heat your olive oil and add jackfruit, broccoli, onion, garlic powder, and onion powder.

Cook for about 8-10 minutes.

Now you want to add your bbq sauce and water mixture. Stir to mix. Simmer for about 20 minutes.

Meanwhile, you want to cook your quinoa according to the package directions. I used 1 cup of quinoa for this recipe.

Quinoa can be very bland, so make sure to add some seasoning to your quinoa. I usually add salt, garlic powder, and onion powder to mine. You can also cook it in a broth, instead of water to give it even more flavor.

 

once your quinoa is done, serve it topped with the vegetarian pulled pork mixture.

I had to add a close up photo of the jackfruit. Do you see the resemblance it has to pulled pork though!? Wait until you try it. It has the same texture as well…so weird!! But a good weird!

Vegetarian Pulled Pork and Broccoli Over Quinoa

Ingredients
  

  • 1 Cup Quinoa
  • 2 Cups Chopped Broccoli
  • 1 4 OZ Can Canned Jackfruit
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 Cup BBQ
  • 1 Cup water
  • 1 tbsp olive oil
  • 1 Medium sweet onion

Instructions
 

  • Rinse, drain jackfruit. Pull apart with fingers so it resembles the look of pulled pork.
  • Chop up your broccoli and onion.
  • Over medium- high heat, heat olive oil in large frying pan. Add jackfruit, broccoli, onion, onion powder, and garlic powder.
  • Cook for about 8-10 minutes.
  • Add BBQ sauce and water to pan. Stir to mix. Turn heat down to low.
  • Simmer for about 20 minutes.
  • Meanwhile, cook your quinoa according to package directions.
  • Serve quinoa topped with jackfruit and broccoli mixture. Enjoy!

Notes

I found my canned jackfruit at Trader Joes.
Quinoa can be very bland by itself. I usually add seasoning to mine to add more flavor. I add salt, onion powder and garlic powder while its cooking. You can also cook it in a broth to make it even more flavorful.
