Method
- Rinse, drain jackfruit. Pull apart with fingers so it resembles the look of pulled pork.
- Chop up your broccoli and onion.
- Over medium- high heat, heat olive oil in large frying pan. Add jackfruit, broccoli, onion, onion powder, and garlic powder.
- Cook for about 8-10 minutes.
- Add BBQ sauce and water to pan. Stir to mix. Turn heat down to low.
- Simmer for about 20 minutes.
- Meanwhile, cook your quinoa according to package directions.
- Serve quinoa topped with jackfruit and broccoli mixture. Enjoy!

I found my canned jackfruit at Trader Joes.
Quinoa can be very bland by itself. I usually add seasoning to mine to add more flavor. I add salt, onion powder and garlic powder while its cooking. You can also cook it in a broth to make it even more flavorful.
