Veggie Fried Orzo

Veggie fried orzo tastes like fried rice you would get at a Chinese restaurant, but without the added fat and calories. It has all of those delicious oriental flavors of ginger and soy sauce!

Have there been times where you were really craving chinese fried rice, but didn’t feel like going out, or spending money? Or maybe you are trying to eat healthy and don’t want to load your body with fat and calories.

Well, this happened to me one night a while back. My reason was, well, all of those reasons. I didn’t feel like going out, or spending money, or eating unhealthy.

A light bulb went off, and I thought of the basics that are in fried rice. Rice (which I didn’t happen to have at the time, but I had Orzo. Orzo is the same shape as rice…kinda.), corn, green beans, peas, carrots, onions or green onions, soy sauce, broccoli, and I love the taste of ginger in my oriental food so I added some which made it even more tastier!

So, I gathered all of those ingredients together, measured them out and created a really delicious and healthier alternative. This recipe is one of my go to recipes for when I don’t have a lot of time or energy to cook dinner. It’s simple and fast.

You want to cook your veggies first of all. Make sure to have your orzo cooked and ready to use.

When your veggies are cooked, you want to add your ground ginger, green onions, and cook for a few more minutes.

Add your orzo right on top, carefully. This part can get messy. If you happen to have a wok, or a deep sauté pan I would use it.

Add your soy sauce all over on top of your orzo. Mix everything around carefully but thoroughly.

As you can see, a few veggies went overboard in the mixing process.

If you are looking to stay away from carbs, or want to cut more carbs out of this recipe you could always double up on the veggies, and use less pasta.

Veggie Fried Orzo

Veggie Fried Orzo

Servings 4 People

Ingredients
  

  • 1 LB. Orzo Pasta, cooked
  • 1 LB. Frozen Mixed Veggies
  • 2 Cups Fresh Broccoli Florets, chopped
  • 1/2 Cup Sliced Scallions
  • 1/3 Cup Soy Sauce
  • 1/2-1 TSP Ground Ginger depending on how much ginger flavor you want
  • Salt & Pepper to taste
  • 1 TBSP olive oil

Instructions
 

  • Cook orzo pasta according to directions. Make sure to add olive oil so it doesn't stick together. Set aside.
  • In a large sauté pan or wok, over medium heat add olive oil. Season broccoli and frozen veggies with salt and pepper. Cook covered for about 10 minutes. Stir occasionally.
  • Add ground ginger and chopped scallions. Stir to mix together. Cook for another 2-3 minutes.
  • Add cooked orzo carefully to pan. Add soy sauce on top of orzo. Stir around to combine all of the veggies and orzo together. Cook another 2-3 minutes.
