Veggie Fried Orzo

Servings: 4 People

Ingredients
  

  • 1 LB. Orzo Pasta, cooked
  • 1 LB. Frozen Mixed Veggies
  • 2 Cups Fresh Broccoli Florets, chopped
  • 1/2 Cup Sliced Scallions
  • 1/3 Cup Soy Sauce
  • 1/2-1 TSP Ground Ginger depending on how much ginger flavor you want
  • Salt & Pepper to taste
  • 1 TBSP olive oil

Method
 

  1. Cook orzo pasta according to directions. Make sure to add olive oil so it doesn't stick together. Set aside.
  2. In a large sauté pan or wok, over medium heat add olive oil. Season broccoli and frozen veggies with salt and pepper. Cook covered for about 10 minutes. Stir occasionally.
  3. Add ground ginger and chopped scallions. Stir to mix together. Cook for another 2-3 minutes.
  4. Add cooked orzo carefully to pan. Add soy sauce on top of orzo. Stir around to combine all of the veggies and orzo together. Cook another 2-3 minutes.
  5. Enjoy!!
