Zucchini Cheese Bread

This zucchini cheese bread is so simple and quick! Bursting with savory cheddar cheese, and shredded zucchini that makes it super moist!

Ingredients
  

  • 1 ½ cups zucchini, shredded (do not squeeze moisture out)
  • 1/4 cup green onion, chopped
  • 2 large eggs
  • 3/4 cups sour cream
  • 1/4 cup butter, melted and cooled
  • 1 ½ cups sharp cheddar cheese, shredded (orange)
  • 2 cups all purpose flour
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 350°. Grease a 9x5 inch loaf pan, set aside.
  • In a large bowl, mix the shredded zucchini, green onions, eggs, sour cream, and butter together. Add in shredded cheese. Mix until well combined.
  • Mix in the flour, baking powder, baking soda and salt. Mix until well combined, and until the mixture gets wet and sticky.
  • Pour batter in greased loaf pan.
  • Bake in preheated oven for 50-70 minutes, or until a toothpick inserted in the middle comes out clean.
  • Let cool a bit before removing loaf from pan.
  • Slice and enjoy!
