Make Scones
Preheat oven to 400°. Line two baking sheets with parchment paper and set aside.
In a large mixing bowl, combine the flour, brown sugar, baking powder, cinnamon and salt.
Add the cubed butter and cut it into flour mixture with pastry cutter or fork until its nice and crumbly.
Add the 1 egg, buttermilk, and vanilla. Mix just until combined. You don't want to over mix.
Fold in the apples.
Turn the dough onto a well floured surface and form into a 1 inch thick circle.
Cut dough circle into 8 wedges. Place scone pieces onto lined baking sheets (4 scones per sheet). Brush each scone with egg wash.
Bake in preheated oven until golden brown, about 18-20 minutes.
Make Brown Butter Maple Glaze
In a small saucepan over medium heat, add butter. Once it's melted, let cook for 2-3 minutes or until it turns brown and has a nutty fragrant.
Take off heat and add maple syrup, powdered sugar, vanilla and salt. Whisk everything together until nice and smooth. Cover and set aside.
When scones are done, sprinkle with some cinnamon sugar. Let cool for a few minutes and add the glaze, followed by some more cinnamon sugar.
Enjoy!
