Make Scones
- Preheat oven to 400°. Line two baking sheets with parchment paper and set aside.
- In a large mixing bowl, combine the flour, brown sugar, baking powder, cinnamon and salt.
- Add the cubed butter and cut it into flour mixture with pastry cutter or fork until its nice and crumbly.
- Add the 1 egg, buttermilk, and vanilla. Mix just until combined. You don't want to over mix.
- Fold in the apples.
- Turn the dough onto a well floured surface and form into a 1 inch thick circle.
- Cut dough circle into 8 wedges. Place scone pieces onto lined baking sheets (4 scones per sheet). Brush each scone with egg wash.
- Bake in preheated oven until golden brown, about 18-20 minutes.
Make Brown Butter Maple Glaze
- In a small saucepan over medium heat, add butter. Once it's melted, let cook for 2-3 minutes or until it turns brown and has a nutty fragrant.
- Take off heat and add maple syrup, powdered sugar, vanilla and salt. Whisk everything together until nice and smooth. Cover and set aside.
- When scones are done, sprinkle with some cinnamon sugar. Let cool for a few minutes and add the glaze, followed by some more cinnamon sugar.
