Black Bean Taco Lettuce Wraps
These black bean taco lettuce wraps are a quick and healthy meal! Crunchy romaine lettuce leaves are filled with sautéed black beans that have been seasoned with taco spices. Topped with a guilt free jalapeño lime crema!

For Crema
- 1/3 cup non fat, plain greek yogurt
- 1/4 cup jarred jalapeños, chopped finely I used tamed (not as spicy)
- 1 tablespoon juice of jarred jalapeños
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1 tablespoon lime juice
- salt to taste
For Tacos
- romaine lettuce leaves try to get decent sized leaves
- olive oil
- 15 oz. can of black beans, drained and rinsed
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- salt to taste
- shredded red cabbage for topping (optional)
- green onions for topping (optional)
Make crema first by mixing all ingredients for cream together, set aside.
In a large saute pan, heat olive oil over medium heat.
Add black beans and all spices to pan. Stir until well mixed and saute for 5-7 minutes.
Assemble tacos by spooning some black beans in romaine lettuce leaf, drizzle crema on top of beans, followed by shredded cabbage and green onions.
