Cheesy Corn Fritters
These cheesy corn fritters are so quick and easy to make! Crispy on the outside and soft on the inside. Sweet corn and savory cheese with the perfect combination of spices!

- 2 cups corn (frozen, fresh or canned)
- 1/4 cup cornmeal
- 1/4 cup all purpose flour
- 1 tsp smoked paprika
- 1 egg
- 1 green onion chopped
- 1/2 cup grated parmesan
- handful of fresh, chopped cilantro
- 1 tbsp lime juice
- salt + pepper to taste
- 1 tbsp olive oil
- sour cream for garnish
In a large enough bowl, mix together corn, cornmeal, flour, paprika, egg, parmesan cheese, green onion, cilantro, lime juice, salt and pepper. If mixture seems too dry, add some water. You want the mixture to hold together.
In a large sauté pan, heat 1 tbsp of olive oil over medium high heat. Scoop batter out with spoon and create a patty (should make 4 fritters) Place fritters on pan and cook on each side for about 4 minutes, or until they turn golden brown.
Serve with a dollop, or side of sour cream. Enjoy!
