Preheat oven to 350º.
Line a large baking sheet with parchment paper or mat.
In a food blender, add goat cheese and olive oil. Blend until whipped, creamy and spreadable.
If you don't have a food blender, you can whisk everything together in a bowl with a whisk.
Lay out dough on a cutting board large enough. Slice into 8 even sections with a pizza cutter or knife.
Place squares on lined baking pan.
Spread each square with goat cheese mixture evenly, until you use it all up.
Add 3 thinly sliced peaches on each square, on top of cheese.
Bake in preheated oven for 10-13 minutes. When dough starts to turn a light golden brown, they are done.
Drizzle honey on top of each square and sprinkle with some black pepper.
Serve while still warm.
These tarts are still delicious reheated! Just bake at 350º for about 5-7 minutes, keeping an eye on them to make sure they don't burn!
