Preheat oven to 375°.
In a small bowl, mix together the diced strawberries and 1 tbsp of sugar. Set aside.
In bowl of a stand mixer or handheld mixer, mix together flour, 1/4 cup of sugar, baking powder and salt.
Add your cubed, cold butter to flour and mix or cut into flour mixture. **you can use a pastry cutter for this. I don't have one so I just used my paddle attachment and it worked just fine!**
Add vanilla and milk to mixture. Mix until well combined and dough becomes thick.
Place your strawberries in a strainer to get rid of excess liquid. You don't want to add too much moisture to your dough.
Once strawberries are drained, add to your dough and fold in a few times with a spatula.
Place dough on a well floured surface and roll out into a circle using your palms or a roller.
You may have to keep adding flour to mixture until it's not as sticky. The flour will help draw the moisture out of dough. Just keep kneading flour into dough until it stops sticking to your hands.
Using a heart shaped cookie cutter, cut out hearts in dough and place on a lined baking sheet. You should get 10-12 scones out of this. Depending on the size of your cookie cutter.
Sprinkle sugar crystals, or regular sugar on top of scones for extra sweetness (optional).
Bake in preheated oven for 14-16 minutes or until they start to turn a light golden brown.
