Roasted Carrots With Honey Butter

Ingredients
  

  • 1-1 1/2 LBS. Large Carrots I used tricolor
  • 4 TBSP Butter
  • 3 TBSP Honey
  • 1 TBSP Fresh Sage, chopped + More for garnish
  • 1/4 TSP Salt
  • Black Pepper, to taste

Instructions
 

  • Preheat oven to 425º.
  • Peel carrots, and cut each end off. Then slice carrots in half length wise.
  • On a large baking sheet, place parchment paper or spray with non stick spray.
  • Place each carrot cut side facing down on baking sheet.
  • In a small bowl, add butter, honey and sage. Heat in microwave until butter is melted. Stir.
  • Drizzle half of the honey butter on top of carrots evenly.
  • Bake in preheated oven for 30-35 minutes, or until carrots are tender.
  • Take out of oven, and drizzle rest of honey butter on top of carrots. Bake for an additional 5 minutes.
