Roast your garlic. When its done, set aside to cool.
Mix together flour, water, salt, and yeast in a stand mixer with dough hook attachment, or large bowl with wooden spoon.
Once the garlic has cooled enough to handle, remove the garlic from the skin, and chop the cloves into smaller pieces.
Add garlic and chopped herbs to the bowl with other ingredients.
Mix all ingredients together until well combined.
Cover bowl with dough tightly with plastic wrap. Let sit for 10 hours or overnight.
Once dough has risen, place on a baking sheet with parchment paper or non stick silicon mat. Sprinkler top of dough with flour.
Bake at 450 for 45 minutes.
