Roasted Red Pepper Dip

This roasted red pepper dip is so easy and simple to make. Serve it with pita or crackers for a tasty appetizer. It's guaranteed to be a hit!

Equipment

  • food processor OR blender

Ingredients
  

  • 8 oz. low fat cream cheese
  • 2 cloves of garlic
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • black pepper to taste
  • 16 oz. jar of roasted red peppers, drained and chopped

Instructions
 

  • Place all ingredients in processor or blender. If you have a small processor like me, puree the chopped peppers first to add room, then add the rest of the ingredients.
  • Puree until the mixture is nice and smooth, free of any large clumps.
  • Pour into a small bowl, cover and let chill for at least 1 hour. The longer the dip sits, the tastier it'll be!
  • Serve with crackers, pita, or fresh vegetables. Enjoy!
