Roasted Red Pepper Dip
This roasted red pepper dip is so easy and simple to make. Serve it with pita or crackers for a tasty appetizer. It's guaranteed to be a hit!

- 8 oz. low fat cream cheese
- 2 cloves of garlic
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- black pepper to taste
- 16 oz. jar of roasted red peppers, drained and chopped
Place all ingredients in processor or blender. If you have a small processor like me, puree the chopped peppers first to add room, then add the rest of the ingredients.
Puree until the mixture is nice and smooth, free of any large clumps.
Pour into a small bowl, cover and let chill for at least 1 hour. The longer the dip sits, the tastier it'll be!
Serve with crackers, pita, or fresh vegetables. Enjoy!
