Slow Cooker Sweet Potato Stew

Ingredients
  

  • 3 Medium Sweet Potatoes, chopped into medium cubes
  • ¼ Cup Celery, chopped
  • 1 Small Yellow Onion, diced
  • 8 oz. Bag Mini Carrots
  • 15 oz. Can Sweet Corn
  • 14.5 oz. Can Diced Tomatoes do not drain
  • 1 lb. Beef Chuck Roast, pre cut or cut into 1/2 inch chunks
  • 2 tbsp Flour
  • ½ tsp Seasoned Salt
  • ½ tsp Balck Pepper
  • 1 Bay Leaf
  • 1 tsp Minced Garlic about 2 cloves
  • ½ tsp Paprika
  • 1 tsp Worcestershire Sauce
  • 2 Beef Boullion Cubes I used beef boullion packets that were sodium free
  • 1 Cup Water

Instructions
 

  • Spray inside of crockput with non stick spray.
  • Wash, peel and chop your sweet potatoes into medium sized cubes. Add to crockpot.
  • Add your cut up celery, onion, carrots, drained corn and undrained tomatoes.
  • In a small bowl, mix together your flour, seasoned salt and pepper.
  • Coat each piece of steak with flour and add pieces of steak on top of vegetables in crockpot.
  • Add in your bay leaf, garlic, paprika, worcestershire sauce, boullion cubes or packets and water.
  • Stir everything around and try to push steak underneath vegetables.
  • Cover and cook on low for 7-9 hours OR high for 5-7 hours.
