Slow Cooker Sweet Potato Stew

Ingredients
  

  • 3 Medium Sweet Potatoes, chopped into medium cubes
  • ¼ Cup Celery, chopped
  • 1 Small Yellow Onion, diced
  • 8 oz. Bag Mini Carrots
  • 15 oz. Can Sweet Corn
  • 14.5 oz. Can Diced Tomatoes do not drain
  • 1 lb. Beef Chuck Roast, pre cut or cut into 1/2 inch chunks
  • 2 tbsp Flour
  • ½ tsp Seasoned Salt
  • ½ tsp Balck Pepper
  • 1 Bay Leaf
  • 1 tsp Minced Garlic about 2 cloves
  • ½ tsp Paprika
  • 1 tsp Worcestershire Sauce
  • 2 Beef Boullion Cubes I used beef boullion packets that were sodium free
  • 1 Cup Water

Method
 

  1. Spray inside of crockput with non stick spray.
  2. Wash, peel and chop your sweet potatoes into medium sized cubes. Add to crockpot.
  3. Add your cut up celery, onion, carrots, drained corn and undrained tomatoes.
  4. In a small bowl, mix together your flour, seasoned salt and pepper.
  5. Coat each piece of steak with flour and add pieces of steak on top of vegetables in crockpot.
  6. Add in your bay leaf, garlic, paprika, worcestershire sauce, boullion cubes or packets and water.
  7. Stir everything around and try to push steak underneath vegetables.
  8. Cover and cook on low for 7-9 hours OR high for 5-7 hours.
  9. Enjoy!
