Steak With Rice And Mango Salsa

This steak with rice and mango salsa is a delicious and creative meal! Grilled steak is topped on a bed of fluffy white rice, and a side of homemade mango salsa!

Ingredients
  

  • 1-1½ lbs. sirloin strip steak I highly recommend marinating your steak in marinade of choice for a few hours!
  • 1 cup rice

For Mango Salsa

  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, diced finely
  • 1/4 cup red pepper, diced finely
  • salt and pepper, to taste
  • 1 tbsp lime juice
  • shredded red cabbage - for garnish (optional)

Instructions
 

  • Prepare your mango salsa by mixing all ingredients for salsa together in bowl. Cover with plastic wrap and set aside.
  • Cook your rice according to package directions. When done, take off heat and keep covered to stay warm.
  • If you are grilling your steak, preheat your grill to medium high heat.
  • Depending on how you like your steaks cooked, timing will vary. I cooked my steaks to be medium well done with some pink inside. This took about 4-5 minutes each side.
  • To plate, place some rice on plate, with cut up steak on top and mango salsa on side.
  • If you mix the salsa in with the rice, its delicious!
