Prep Time 10 minutes mins
Cook Time 15 minutes mins
Total Time 25 minutes mins
- 1-1½ lbs. sirloin strip steak I highly recommend marinating your steak in marinade of choice for a few hours!
- 1 cup rice
For Mango Salsa
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/4 cup red onion, diced finely
- 1/4 cup red pepper, diced finely
- salt and pepper, to taste
- 1 tbsp lime juice
- shredded red cabbage - for garnish (optional)
Prepare your mango salsa by mixing all ingredients for salsa together in bowl. Cover with plastic wrap and set aside.
Cook your rice according to package directions. When done, take off heat and keep covered to stay warm.
If you are grilling your steak, preheat your grill to medium high heat.
Depending on how you like your steaks cooked, timing will vary. I cooked my steaks to be medium well done with some pink inside. This took about 4-5 minutes each side.
To plate, place some rice on plate, with cut up steak on top and mango salsa on side.
If you mix the salsa in with the rice, its delicious!
Enjoy!
