Preheat oven to 450 degrees.
Wash, peel and cut up sweet potatoes. Make sure to cut them into long somewhat thin French fry shapes.
Add cut up potatoes to large bowl.
Add olive oil, onion powder and salt to bowl with cut up potatoes.
Mix around until every fry is coated.
Dump fries on a large baking sheet that has been lined with parchment paper.
Make sure to spread them out so they aren't on top of each other and have some space.
Bake in preheated oven for 30-35 minutes or until the fries start to brown and crisp up.
In meantime, make aioli by mixing together mayonnaise and sriracha.
Heat aioli mixture in microwave for about 10 seconds. Set aside.
When fries are done, place on serving dish with aioli for dipping. Enjoy!
