Sweet Potato + Quinoa Black Bean Burgers With Lettuce Bun

Servings 8 Burgers

Ingredients
  

  • 2 Large Sweet Potatoes
  • 1 Cup Cooked Quinoa
  • 1 Can Black Beans Washed and Drained
  • 1 TSP Salt
  • 1 TSP Onion Powder
  • 1/2 TSP Mrs. Dash garlic + herb blend
  • 1/4 TSP Smoked Paprika
  • 1/8 TSP Chili Powder
  • 2 TBSP Plain Panko Bread Crumbs
  • 1 Egg
  • 1 Large head of Iceberg Lettuce
  • Cheese of choice
  • Chipotle Mayo by JUST brand You can use whatever condiments on your burger, but I highly recommend trying the chipotle mayo by JUST. Its soooo good!!!

Instructions
 

  • First you want to cook your 1 cup of quinoa according to package directions.
  • In the meantime, cook your potatoes. Wash potatoes, then poke them both all around with a fork. Place potatoes on a damp paper towel in microwave and cook on high for 5 minutes. Turn over and cook for another 5 minutes. When fork pierces through them easily and smoothly, they are done.
  • Carefully cut potatoes open in half to allow them to cool. Once they are cooled enough to handle, scoop out potatoes from skin and add to large mixing bowl.
  • Add your black beans to bowl with potatoes. Mash ingredients together until they combine together.
  • Add cooked quinoa to bowl along with spices, egg, and panko crumbs. Mix until well combined.
  • Form mixture into patties with hands. About 3 1/2-4 inches wide.
  • Place patties on plate and separate layers with wax paper, parchment paper or foil. Let chill in fridge for about 15-20 minutes.
  • In a large sauté pan add some olive oil over medium-high heat. Add patties and cook for 5-7 minutes on each side.
  • Right before they are down, add cheese if you want cheese. Cover and take off heat. Let cheese melt.
  • Place burger in large iceberg lettuce leaf for bun. Add desired condiments. I only added chipotle mayo by JUST. Its amazing!
  • Enjoy!

Notes

This recipe makes about 8 burgers. You can freeze any uncooked burgers. Or you can cook all of the burgers and keep them in containers in fridge up to a week!
