Tortellini Caprese Pasta Salad
This tortellini caprese pasta salad screams summer! Sweet cherry tomatoes, fresh basil from the garden, mozzarella pearls, and Italian seasonings mixed with a sweet and tangy balsamic mixture!

- 20 oz. frozen cheese tortellini
- 8 oz. mozzerella pearls
- 1/4 cup fresh basil, chopped
- 10 oz. cherry tomatoes, halved
- 3 garlic cloves, minced finely
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1 tbsp italian seasoning
- salt and pepper to taste
- balsamic glaze for drizzling
Cook tortellini according to package directions.
When tortellini are done, run over cold water to quicken cooling process. Make sure to drain all excess water out.
Place tortellini in large bowl to mix. Add in your mozzerella pearls, chopped basil, halved cherry tomatoes, minced garlic, balsamic vinegar, olive oil, Italian seasoning, salt and pepper. Mix everything together to coat all tortellini.
Let the pasta salad chill in the fridge for at least 30 minutes before serving. The longer you let it sit and chill, the tastier. You could always make this recipe the night before!
When your pasta salad is ready to be served, place in a serving bowl, drizzle with some balsamic glaze, and garnish with more basil (optional).
