Vegan Blueberry Cookies
These vegan blueberry cookies are so good! They are soft and chewy, with the perfect sweetness! Bursting with luscious blueberry flavor, and very eye-catching!

- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/3 cup plant based butter, soft I've been loving country crocks plant based avocado oil butter!
- 1/3 cup + 1 tbsp granulated sugar
- 1/2 cup frozen blueberries
Whisk together flour, baking powder and salt.
Thaw frozen blueberries in microwave safe bowl, in microwave for 30-40 seconds, until they are soft.
Using a stand mixer or handheld mixer, cream together butter and sugar.
Add blueberries and mix on high speed until the berries are all crushed and dough is purple.
Add dry ingredients to wet ingredients and mix until everything is well combined and dough is smooth.
Chill dough in freezer for 30 minutes.
Preheat oven to 400°.
Shape dough into 12 balls and place on a lined baking sheet.
Bake in preheated oven for 10-13 minutes, or until cookies start to brown on edges.
Let cookies cool, enjoy!
