Vegetarian Sausage and Potato Roast

Ingredients
  

  • 3 tbsp olive oil
  • 1 medium sweet onion
  • 3 medium yellow potatoes
  • 2 large sweet potatoes
  • 1 tbsp Mrs. Dash garlic + herb seasoning
  • 1/2 tsp rosemary
  • 1 package vegetarian sausage I used Tofurky Italian Sausage
  • 1 tsp Salt

Method
 

  1. Preheat oven to 450 degrees.
  2. Wash, peel, and dice potatoes. Add to large bowl.
  3. Chop onion and sausage. Add to large bowl the potatoes are in.
  4. Add olive oil, rosemary, mrs. dash, salt and mix to combine everything.
  5. Place in a large sheet pan lined with parchment paper. Make sure everything is spread out evenly and in one layer.
  6. Bake for 50 minutes.
