Vegetarian Sausage and Potato Roast

Ingredients
  

  • 3 tbsp olive oil
  • 1 medium sweet onion
  • 3 medium yellow potatoes
  • 2 large sweet potatoes
  • 1 tbsp Mrs. Dash garlic + herb seasoning
  • 1/2 tsp rosemary
  • 1 package vegetarian sausage I used Tofurky Italian Sausage
  • 1 tsp Salt

Instructions
 

  • Preheat oven to 450 degrees.
  • Wash, peel, and dice potatoes. Add to large bowl.
  • Chop onion and sausage. Add to large bowl the potatoes are in.
  • Add olive oil, rosemary, mrs. dash, salt and mix to combine everything.
  • Place in a large sheet pan lined with parchment paper. Make sure everything is spread out evenly and in one layer.
  • Bake for 50 minutes.
