- In a large enough bowl, mix together corn, cornmeal, flour, paprika, egg, parmesan cheese, green onion, cilantro, lime juice, salt and pepper. If mixture seems too dry, add some water. You want the mixture to hold together.
- In a large sauté pan, heat 1 tbsp of olive oil over medium high heat. Scoop batter out with spoon and create a patty (should make 4 fritters) Place fritters on pan and cook on each side for about 4 minutes, or until they turn golden brown.
- Serve with a dollop, or side of sour cream. Enjoy!
