If you have ever been steered away from making bread for whatever reason, rethink your decision. I am telling you. It is a wonderful thing. You will never want to buy another loaf of bread from the grocery store again.
Just look at how beautiful it is. When you first cut into the loaf, you will notice how soft it is on the inside, and crispy on the outside. You will be pretty happy!

I have so many herbs right now in my garden that I need to use up before the first frost kills them.
I used fresh sage and thyme for this bread recipe. The taste combination that these herbs make together is amazing.

When your garlic is all done, set aside to cool. In the meantime mix flour, yeast, water and salt together in a stand mixer with dough hook attachment, or a large bowl with a wooden spoon.
When your garlic has cooled enough to handle, peel the garlic from the skin and chop up into small pieces.
Add the garlic and herbs to the bowl, and mix in with the dough.
Let the dough sit for 10 hours or overnight. Cover tightly with plastic wrap.
Once the dough has had enough time to rise, place on a baking sheet lined with parchment paper or a silicone mat.
Bake at 450 degrees for 45 minutes.
