Roasted carrots with honey butter are more than just a delicious side dish. They are a work of art! Look at all of those colors!
When I had this recipe in mind, I planned on getting just plain old orange carrots. But I happened to walk by this big bag of beautiful, triple colored carrots, and had to use them instead! I’m glad I did, because these guys offer a variety of flavors.
The purple ones were my favorite. The color was absolutely beautiful, and the taste was excellent! Unlike your typical orange carrot, the purple ones didn’t have that carrot taste. They had more of a mild sweet taste.
My sage is the queen of herbs this year in my garden. Its growing like crazy! Its large and in charge, literally. This recipe called for thyme, but I decided to use sage instead.
Sage goes so well with butter. Ever have brown butter and sage sauce? Its excellent!
This honey butter sauce is as simple as it sounds. Its honey, and butter…melted together with some sage.
Before the honey butter sauce is drizzled on top of the carrots, the carrots were just plain, boring carrots.
But holy moly…smelling that honey and butter was making me want to eat it by the spoon, but I didn’t . I had to save it all for the carrots, unfortunately.
