These vegan blueberry cookies are so good! They are soft and chewy, with the perfect sweetness! Bursting with luscious blueberry flavor, and very eye-catching!

This recipe for vegan blueberry cookies is amazing. They are super tasty. They texture is perfect, and they have a beautiful purple color, thanks to the blueberries! Kids will love them!

If you aren’t a vegan, most people get turned off by the word “vegan”. It’s just how it is, unfortunately.

These cookies are vegan only because there is no egg, and I used plant based butter, which me and my gut have been loving lately!

The texture of these cookies is the perfect texture, if you’re a soft cookie fan.

They are so soft. Like melt in your mouth soft. It’s insane.

The entire time I was making these cookies, I was craving some black raspberry ice cream. Thats exactly what the dough looked like! Such a beautiful color…with zero added food dye!

Like I said, kids will love them! That purple color will for sure grab their attention.

They are the perfect size too. Not too big, not too small.

Vegan Blueberry Cookies

Vegan Blueberry Cookies

These vegan blueberry cookies are so good! They are soft and chewy, with the perfect sweetness! Bursting with luscious blueberry flavor, and very eye-catching!

Ingredients
  

  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/3 cup plant based butter, soft I've been loving country crocks plant based avocado oil butter!
  • 1/3 cup + 1 tbsp granulated sugar
  • 1/2 cup frozen blueberries

Instructions
 

  • Whisk together flour, baking powder and salt.
  • Thaw frozen blueberries in microwave safe bowl, in microwave for 30-40 seconds, until they are soft.
  • Using a stand mixer or handheld mixer, cream together butter and sugar.
  • Add blueberries and mix on high speed until the berries are all crushed and dough is purple.
  • Add dry ingredients to wet ingredients and mix until everything is well combined and dough is smooth.
  • Chill dough in freezer for 30 minutes.
  • Preheat oven to 400°.
  • Shape dough into 12 balls and place on a lined baking sheet.
  • Bake in preheated oven for 10-13 minutes, or until cookies start to brown on edges.
  • Let cookies cool, enjoy!
