Apple Pie Bread
Apple pie bread is a simple, sweet and delicious bread filled with a layer of sweet apples, cinnamon and brown sugar! Topped with more apples, cinnamon and sugar for a perfect crunchy topping!

- 1/2 cup brown sugar, packed
- 1½ tsp cinnamon
- 2/3 cup granulated white sugar
- 1/2 cup (1 stick) salted butter, soft
- 2 large eggs
- 2 tsp vanilla extract
- 1½ cup all purpose flour
- 1½ tsp baking powder
- 1/2 cup milk
- 1½ cup granny smith apples, peeled and chopped (about 1 large apple or 2 small apples)
Preheat oven to 350°. Grease a loaf pan and set aside.
In a small bowl, mix together brown sugar and cinnamon. Set aside.
In a bowl of stand mixer using paddle attachment, or large bowl using hand held mixer, cream together butter and granulated sugar.
Add eggs and vanilla. Mix until combined.
Add in flour, baking powder and milk. Mix until well combined and smooth.
Pour half of the batter in loaf pan. Add half of the chopped apples on top of batter and press gently into batter. Add half of cinnamon and brown sugar mixture on top of apples.
Cover with the rest of the batter. Add the rest of the apples, and the rest of the cinnamon and brown sugar mixture.
Cover loosely with foil and bake in preheated oven for about 1 hour, or until a toothpick insreted comes out clean.
Allow bread to cool completely before cutting.
