Bean Balls - Vegetarian Meatballs

Servings 12 Bean Balls

Ingredients

  • 1 15.5 OZ. Can Of Cannellini Beans, rinsed and drained
  • 1/4 Cup Plain Panko Bread Crumbs
  • 1 Egg
  • 1 TBSP Worcestershire Sauce
  • 1/3 Cup Onion, diced
  • 2 Cloves Garlic (minced)
  • 1 TSP Oregano
  • 1 TSP Salt
  • 1/4 TSP Paprika

Instructions

  • Preheat oven to 350 degrees.
  • In a food processor, puree beans until they are smooth. Make sure there are no pieces of whole beans. If you don't have a food processor, you can use a potato masher, or fork.
  • Add your mashed beans to a large mixing bowl.
  • Add bread crumbs, egg, Worcestershire sauce, salt, onion, garlic, paprika and oregano. Mix everything together until well combined.
  • If your mixture isn't as tacky and thick as you need, add more bread crumbs to mixture. You want a nice thick consistency just like a meatball.
  • On a non stick lined baking sheet, roll mixture into balls, and place on baking sheet.
  • Bake in preheated oven for 20-25 minutes. They are done when they start to turn golden brown.
  • Enjoy these as is, or add them to some sauce with pasta, or on top of a rice bowl, or salad! The possibilities are endless!
