Preheat oven to 400°. Line a large baking sheet with parchment paper and set aside.
In a large sauté pan, cook ground beef. Drain when done.
Add bbq sauce to ground beef and mix around. Set aside.
Prepare your toppings by slicing and dicing your tomato, olives (if they need to be sliced), lettuce, jalapeños and red onion. Set aside.
Place half of the bag of chips on lined baking sheet, spread out in even layer.
Use half of the cooked beef and spoon it around on top of your chips evenly. Followed by half of your queso and half of your shredded cheese.
Add the rest of your chips on top of bottom layer, and add the rest of the beef, followed by the rest of your queso and shredded cheese. Making sure to spread everything out evenly so each chip gets some!
Bake in preheated oven until cheese has melted, about 6-7 minutes.
When done, immediately add your toppings evenly on top!
For the sour cream, I spooned it into a ziplock bag and cut the tip off to drizzle it on easier.
